16 fresh green asparagus
Mayonnaise
2 egg yolks
1 teaspoon French unsweetened mustard
1 tablespoon white wine vinegar
2 1⁄2 dl rapeseed oil
1 pinch salt
1 lemon, grated rind
1 pot fresh tarragon
1 dl hazelnut
kernels 60 g trout roe
good cold-pressed rapeseed oil
Flaked salt and freshly ground black pepper
