Ingredients - 4 servings

  • 1 butternut squash, about 1 kg
  • Rapeseed or olive oil
  • 2 dl sour cream
  • 1/2–1 dl pumpkin seeds (from the pumpkin or purchased)
  • 1-2-3-layer: 1 dl vinegar, 12%, 2 dl granulated sugar, 3 dl water
  • 5 thin slices of fresh ginger
  • 1 tbsp juniper berries
  • 700 g fallow deer antler fillet
  • Butter for frying
  • Salt and freshly ground black pepper
  • 3 cups red wine
  • 2 tbsp concentrated game stock
