New Food & Beverage Manager at vår gård
Liam has a solid background as an executive chef from, among others, the Hilton Hotel in Slussen and Pontus Frithiof, where he was highly appreciated for his ability to elevate the staff and always deliver the highest level of service to the guest. Before moving to Stockholm with his family, he worked in Scotland at a tavern outside Edinburgh, which under his leadership was awarded a star in the Michelin Guide three years in a row.
Vår Gård has long been a historic and well-attended conference facility in Saltsjöbaden . Our strength and passion in particular is the food experience, people and meetings in an inspiring environment. When the pandemic hit, we were hit hard like everyone else in the hospitality industry and had to completely change when conferences were cancelled. Liam talks about how he sees his new role and workplace:
- As a Saltis resident, I have often walked past Vår Gård and marveled at the beautiful place and the stately building. However, I experienced that it was often closed to us private guests when conferences were in progress. During the spring restrictions, something happened and Vår Gård opened up every day of the week with lunches and dinners for us in the local area. A welcome initiative and highly corona-adapted. Vår Gård has really changed and dared to invest and invest in a tough time. It will be very exciting to be involved in developing the business towards the private market. My role will be to ensure a common thread between the kitchen and service. We have a fantastic product that will be delivered through the highest quality of service and dining experience for our guests. The food is of course number one.
During the summer we have had a longer break, but that does not mean that the house has been given a rest. Behind the walls, an extensive renovation has been underway where a new café, bakery and a wine bar will take place on the entrance floor. A new restaurant and bar are also expected in the grand tower villa Skärtofta later this autumn and more news is in the works. What ambitions and hopes do you feel in this current time of restrictions and uncertainty?
- People will be anxious about visiting. We must ensure that everyone feels safe in our environment. Both guests and staff. To our advantage, we have large areas that can be adapted in an effective way for guests' safety and comfort. If I may go a little ahead, I would like to mention our Christmas concept, which this year will be a unique experience in an atmospheric environment. We are completely abandoning the buffet and not only reducing food waste but also crowding. A limited number of guests will enjoy a wonderful Christmas dinner with generous distances. More personal and relaxed with a nice homely feel. My hope is that Vår Gård will become as safe a choice for private guests who want to enjoy good food and beautiful surroundings as conference guests have done for generations. We are looking forward to the future. Vår Gård is a hidden gem that will be put on the map.
