Ingredients, 4 people
16 fresh green asparagus
Mayonnaise
2 egg yolks
1 tsp French unsweetened mustard
1 tbsp white wine
2 1⁄2 dl rapeseed oil
1 tsp salt
1 lemon, grated zest
1 jar fresh tarragon
1 dl hazelnut kernels
60 g trout roe
good cold-pressed rapeseed oil
Flaked salt and freshly ground black pepper
